I love the peace that this time of year brings with it. The craziness that accompanies the holidays has come to an end, and a certain quiet has crept in and brought with it a totally different rhythm to my days
I have given myself permission to hibernate during these cold, grey days. Life’s pace has definitely slowed down and it feels good to just be quiet, feel the peace, focus on the magic of life.
I’ve been enjoying cooking and look forward to doing a bit of baking again soon. It’s been perfect weather for making my husband’s favorite, lasagna and steaming hot bowls of soup. I made a side dish of one of my favorites – arugula salad with toasted walnuts, beets, goat cheese and a lite lemon vinegarette. I just use, wine vinegar, olive oil, half a lemon and a spoonful of honey. Mmm, it’s so good and pairs so well with peppery lemon chicken and brown rice.
I’m also planning on writing an updated version of my perfect day. Years ago, a book I was reading suggested taking pen to paper and writing down what your perfect day would like from the time you wake up in the morning until the time you go to bed at night. It mentioned that you should make sure that you make it exactly the way you would love it to be. Don’t think about it, just do it. It’s amazing what you learn about yourself and also, how it helps you to take the steps needed to take your life in the direction of your dreams.
