I love, love, love making meals that take less than half hour to get on the table when things get busy around here. Today was one of those days so I decided on chicken with snow peas – Oh, so good!
I put on a pot of water to make the rice. I added 2 bouillon cubes but you can use chicken stock or broth in place of the water. I rinsed off some snow peas and set to work. I cut up some chicken and minced 3 cloves of garlic. I put about 2 tbsp of olive oil and a pat of butter into a sauce pan and added chicken. When I turned it over, I added the garlic and some fresh ground pepper.
At this point, you can add about 1/4 cup white wine – this is totally optional. You can also pour a bit for yourself – it’s important to keep the cook happy! Add a few shakes of soy sauce, as much or as little as you like. It’s salty, but it definitely adds a nice tang to the dish.
Now it’s time to add the snow peas. A couple of minutes should do it because you want them to have a nice crunch.
This is the perfect time to add a pat of butter to thicken the sauce a bit. Give it a good stir and it’s ready to serve. You can make the whole dish in the time it takes to boil the rice. We had it over brown rice, but white rice or even pasta would work too.
I love this dish! It’s so flexible and forgiving – you can use one clove of garlic or 3/4, add white wine or not, add a bit of fresh or dried ginger. Just taste it as you go. I don’t usually add salt because the soy sauce is salty enough. And, best of all, it’s quick and delicious!!
I will admit to really enjoying cooking, but I don’t always want or have time to spend hours in the kitchen. That’s when I reach for the simple recipes that don’t require too many ingredients and take under half hour to prepare. This one really fits the bill. If you decide to give it a try, enjoy!
As always, I’m so glad you stopped by.

Wow! This looks simply delicious, Susan! And it looks like a dish even I could tackle!
LOL. Of, course you can make this, Mia. It really is simple.

Your arboretum pics are so pretty..
Going to catch up!
I’m so sorry, Monique. I switched mail service but that doesn’t seem to have helped. I’ll have to contact them to see what the problem is. Glad you’re here.
Looks like a weight watcher friendly meal. Thanks
I think you’re right, Kathy. It’s really quite lite (and delicious) It could be adapted to a weight watcher dish easily.
Looks and sounds very good . . . I like, (and need) quick and easy during these busier early spring days. Yesterday was “one of those days” and fortunetly I remembered to take some chicken breast out of the freezer in the morning so I grilled them. Fresh asparagus “came on” the past few days and my husband picked some up and oh my, what a difference with Fresh versus Store bought. I tossed then in Olive oil and sprinkled some kosher salt, added a bit of Parmesan, baked them at 425 for about ten minutes and bingo . . . a wonderful meal!
Asparagus is one of Michigan’s best . . . and we happen to live right in the middle of asparagus land. I wish I could share some with you!
I wish you could too, Lynne. Asparagus is one of my favorites and I like them prepared exactly the same way you do. Sounds like a delicious meal. I sometimes think simple is best.
Beautiful. Quick. Nutritious.
A joy to stop past your blog once again.
Wishing you a pleasant weekend Susan.
Love Sita ♥️♥️♥️
Thanks so much for your visit, Sita. I hope you enjoy your week-end as well.
I made your recipe last night and it was the best! Thanks as I had hit a blank wall as to what to cook.
Oh, Sharon, I’m so glad you liked it! And, it’s so easy to make, isn’t it?
Have a great weekend!
Hi Susan … This looks like a delicious springtime meal. I like meals that are simple yet taste so good. Thank you for sharing. Weekend Blessings ♥ Teri
Hi Teri – It is a nice, lite meal for this time of year. Happy Weekend!
This does look delicious! I am like you…I enjoy cooking but that doesn’t mean that I want to spend hours at it on a daily basis, either
Hi Deb – It’s always nice to cook extra while you’re at it so you have an extra meal you don’t have to think about.
Hi Susan. This looks delicious. I do love a quick meal and your chicken dish would even be eaten by all my children. We call snow peas mangetout. Funny how different parts of the English speaking world use a different vocabulary. Thanks for your visit on my blog, your comment made me smile. Christina xx
That’s the first time I’ve ever heard that word – mangetout. I have scottish ancestry and hope to visit your country one of these days.
I adore meals that are 1/2 hour too! I dislike spending loads of time in the kitchen. I’d rather be knitting
your meal looks delicious and I am a big fan of snow peas.
Your kitchen looks beautiful, Karen. And you’ve reminded me that I still have to use my gift certificate for knitting lessons. Never too late to learn something new.
HI Susan!
We are always looking for quick meals. My husband does most of the cooking…. (lucky me) but we have two small children so we need fast, simple and nutrient dense food. I’m not much for red meat, but we do chicken a lot. Thanks for the recipe!
BTW: I’m starting up my blog again. Would love to see you over there. : )
So glad you’re back, Cory, and so glad that everything is going so well with your music!
Mmmmm I love snow peas and can almost taste them and hear them crunch. Great simple recipe, I’m like you, I love to cook but some days you just want easy breezy!! Jan x
I think most of us are like that, Jan. We want simple, really tasty meals, using recipes that don’t take forever.
I love simple recipes that are delicious. I still haven’t planted my snow peas so I’ll be visiting farmers market for them before mine are ready.
They really are so good, aren’t they? I’m trying to think of other ways to use them. I’ll have to see what I come up with. Thanks for stopping by, Robin.
