I love, love, love making meals that take less than half hour to get on the table when things get busy around here. Today was one of those days so I decided on chicken with snow peas – Oh, so good!
I put on a pot of water to make the rice. I added 2 bouillon cubes but you can use chicken stock or broth in place of the water. I rinsed off some snow peas and set to work. I cut up some chicken and minced 3 cloves of garlic. I put about 2 tbsp of olive oil and a pat of butter into a sauce pan and added chicken. When I turned it over, I added the garlic and some fresh ground pepper.
At this point, you can add about 1/4 cup white wine – this is totally optional. You can also pour a bit for yourself – it’s important to keep the cook happy! Add a few shakes of soy sauce, as much or as little as you like. It’s salty, but it definitely adds a nice tang to the dish.
Now it’s time to add the snow peas. A couple of minutes should do it because you want them to have a nice crunch.
This is the perfect time to add a pat of butter to thicken the sauce a bit. Give it a good stir and it’s ready to serve. You can make the whole dish in the time it takes to boil the rice. We had it over brown rice, but white rice or even pasta would work too.
I love this dish! It’s so flexible and forgiving – you can use one clove of garlic or 3/4, add white wine or not, add a bit of fresh or dried ginger. Just taste it as you go. I don’t usually add salt because the soy sauce is salty enough. And, best of all, it’s quick and delicious!!
I will admit to really enjoying cooking, but I don’t always want or have time to spend hours in the kitchen. That’s when I reach for the simple recipes that don’t require too many ingredients and take under half hour to prepare. This one really fits the bill. If you decide to give it a try, enjoy!
