Lemon Zinger Loaf Cake

As I was sipping my first cup of coffee yesterday morning, I suddenly had a vision of my lemon zinger loaf cake with a not-so-thin layer of sugary lemon icing. Before I finished the last sip, I had the bowl, flour, sugar, etc. out on the counter. I planned on a simple dinner for tonight and I thought this would be the perfect dessert.

The recipe is so simple and delicious, I have to share it. You just sift
2 cups of flour
1 cup of sugar
3 tsp baking powder and
1 tsp of salt
into a bowl. Add
1 stick of butter at room temp.
3/4 cup milk
2 eggs
juice of 2 lemons (should be about 1/4 cup) and
zest of 2 lemons
Beat lightly and pour into a greased loaf pan. This goes in a preheated 375 degree oven for about 45-50 mins. I use a wooden skewer to test for doneness.

When the cake was cool, I made some icing to pour over the top. I used
1 1/2 cups confectioner’s sugar
juice of l lemon
zest of l lemon
I added a bit of milk as I beat this – just enough to make it so it would drip down the sides as I poured it over the top. Use less milk if you want a thicker frosting.

Dinner was easy and delicious – I popped a 5 pound chicken, dotted with butter, salt and pepper in a 400 degree oven for an hour. I let it sit 15 minutes before serving and it was incredibly moist.

I cut up some potatoes, brussel sprouts, and small red potatoes and and added olive oil, S & P…..

and put them in the oven to roast about 15 minutes before the chicken was finished.

What could be easier? Simple and delicious and great leftovers for salad the next day.

But the best was yet to come. I served up the lemon zinger cake with a few raspberries – a perfect compliment to the lemony goodness of the cake. Not a fancy dessert, but definitely easy to make and oh, so good!

I love serving up quick, tasty dinners that don’t keep me in the kitchen all day. Next time I make this cake, I’m going to double the recipe so I have one to freeze for another day. The frosting can be added after it defrosts. It makes life a little easier having a few meals and desserts that you can take out of the freezer in the morning and just warm up at night. Perfect for those extra busy days.

    Your dinner looks wonderful. I’ve always liked a tangy lemon loaf cake and lost my favorite recipe, and now you’ve gotten me encouraged to try this one. My grandkids always ask for my lemon cake. The veggies and chicken or turkey also look scrumptious!

      Hi Darlene, This recipe really has a nice tang to it and the icing, you can really use as much or as little lemon as you like. I happen to like it with a good zip to it. Enjoy your week-end.

      LOL. Honestly, the chicken and veggies just get popped in the oven. What’s easier than that? It takes an hour to roast but the prep time is only 10 minutes.

      I love roasted veggies, Sharon. They only take a few minutes to prepare and they’re always so tasty – no matter what combination you use.

    Oh I do like the look of this cake. I am firmly in the camp of there’s no such thing as too much drizzle on a lemon drizzle cake so yours has won me over straight away. I’ve not heard of adding milk to the icing so I’ll definitely be giving that a try!

      Thanks for stopping by, Vickie. Sometimes I just use confectioners sugar and milk to make a glaze. You can add a bit of vanilla too.

      I try to go easy on the sugar but every once in awhile I love to indulge in something really tasty. This really fit the bill.

    Roasted veggies are the best! And that cake looks so simple and fresh. I have been in a dinner rut lately. Maybe I need to start planning backwards- dessert first!

    I was like that early this morning in that for some reason I decided to bake a batch of cookies…though I was ‘good’ and took most of them down to my son’s family later :)
    I think I might try this lemon cake down the line… I love lemon !

    That cake! I want to make one but I know that I would end of eating the whole thing. I wish I was more mindful about roasting chicken. I rarely think ahead about it and end buying a rotisserie chicken.
