Dutch Baby With a Twist








As I sat with my first cup of coffee this morning, I was going through my Cast Iron Skillet cookbook,
looking for an idea for dinner. What immediately caught my eye was a recipe for a Dutch baby with
pears sauteed in butter and cinnamon. Forget about dinner – I was suddenly looking for some instant gratification, something that took just a few minutes to make, something that would make my mouth water!

I used this recipe for inspiration but actually followed my basic gluten-free, sugar-free version with a couple of little changes. As the pears were sautéing in butter, cinnamon and a dash of agave nectar for a bit of sweetness, I quickly popped all the other ingredients in the blender and then poured the batter into the skillet over the pears and baked for 10 minutes. I used this time to clean up my mess – no one can make a mess as quickly as I can.

I poured myself a second cup of coffee and cut myself a healthy serving of this delicious looking treat. It did not disappoint – It was sooo good. I can’t believe what a difference using almond extract instead of vanilla made. I think next time, I’ll try it without the pears and add some chopped
almonds on top. So many possibilities.

    Happy Sunday to you, Susan. That looks so good! I really should buy pears more often as they are delicious. Pears seem to be a forgotten fruit here. My husband’s favorite pan is his cast on frypan; it gets lots of use, so it is seasoned very well. BTW, I love your coffee cup! I’m drinking out of my much loved Minnie Mouse mug from Disney World this morning.

      The frying pan was a wedding shower gift to my mother 70 something years ago, Cindy, which makes it
      so special to me. I love knowing that I’m using the same pan she used the whole time I was growing up.

    When I saw your post title, I was excited! I LOVE Dutch babies, and have been known to make a few in my day, but this looks and sounds amazing and is a definite ‘must try ‘ for me!

      I can’t believe you don’t have a cast iron pan, Jane. I thought you had everything!
      I think you need to treat yourself to one – next trip to Home Goods.

      LOL. I know that feeling, Rue. Food blogs featuring photos of baked French toast or pancakes send me into the kitchen for the frying pan when just minutes before I was planning on a smoothie!

    That looks yummy! I bet I can keep up with you, pan for pan, when it comes to making a mess in the kitchen. Hubby always wonders why I have to dirty every bowl I own every time I cook. I come by it honestly – my grandmother and great-grandmother cooked the same way! LOL
    Thanks so much for stopping by my blog. I had used that pattern once before so I was a little familiar with it before I started those two an since they are made with a jelly roll and a charm pack there isn’t a lot of cutting. (just a lot of fuzz to clean out of the machine when they are finished!)
